I am Korean, so when SEORAE JIB launched Singapore’s first 100 Knife Cuts Kkot Samgyeopsal, my honest reaction was: this had better be more than a dramatic haircut for pork belly. Then it hit the grill, and I got why they did it.
The Setting
SEORAE JIB sits inside Plaza Singapura on Orchard Road, a short walk from Dhoby Ghaut. They even flew in one of their head chefs from Korea to demonstrate the cut when it launched. This review came from a media collaboration with SEORAE JIB, and the opinions are mine.
What To Order
The Kkot Samgyeopsal, also called Flower Pork Belly, is premium air-flown Canadian pork scored with over 100 precise knife cuts. On the grill you can see the point of it: the surface opens up like petals, the edges crisp, and the inside stays juicy and tender, so the texture is far more interesting than standard pork belly.
The same treatment goes on the Kkot Nuruk Moksal, but the real twist for me was the pork collar. That one had the best bite of the night, juicy and tender.
They suggest ten ways to eat it. My top picks: meljeot with raw onion, seaweed ssambap, and the onion sauce when you want to keep it simple. And SEORAE JIB is confident enough about the cuts that if the Kkot Samgyeopsal falls short, you get a complimentary kimchi or haemul pancake. Imagine being the one person at the table actually counting.

The Verdict
The 100 cuts are not theatre. They genuinely change the texture, the lunch set is one of the better KBBQ deals on Orchard right now, and the pork collar is the order I would repeat.
