Crispy gamjajeon starts with one rule: wet potatoes steam, while dry potatoes crisp. This Korean potato pancake recipe shreds the potatoes thin, salts them for 15 minutes and squeezes out as much liquid as possible before the mixture reaches the pan.

The pancake keeps a classic soy dipping sauce beside it, then adds a fresh chimichurri-style sauce with cilantro, garlic, red chilli and gochugaru. One is sweet, salty and sharp. The other brings herbs, chilli and olive oil to the hot potato jeon.

What Makes This Gamjajeon Crisp?

Removing water is the central technique. Thin potato shreds hold moisture, and that liquid produces steam in the pan. Steam works against the crisp texture this recipe is designed to create.

The potatoes are rinsed once, drained, salted and rested before squeezing. Each part of that sequence happens before flour is added. By the time the shreds are mixed for frying, they should be as dry as you can make them by hand.

The pancake is also pressed flat in hot olive oil. A thin layer gives more potato direct contact with the pan, allowing the edges to turn golden before the jeon is flipped to crisp on the second side.

What Ingredients Do You Need for Gamjajeon?

For the potato pancake:

  • 3 potatoes
  • 1 to 2 tablespoons flour
  • 1/3 tablespoon coarse sea salt
  • Black pepper, to taste
  • Olive oil for pan-frying

This is a short batter because the potatoes provide the main structure. Add only one to two tablespoons flour after the salted shreds have been squeezed dry. Do not compensate for wet potatoes by adding extra flour.

The recipe begins with three potatoes, but it does not specify their weight, variety or a finished serving count. Follow the visual method instead: shred thinly, remove water, press a handful flat and fry until golden.

Why Do You Rinse and Salt the Potatoes?

Rinse the shredded potatoes once in water to remove excess starch, then drain them. Mix in 1/3 tablespoon coarse sea salt and leave the shreds for 15 minutes.

The salt rest gives the potatoes time to release more liquid. After 15 minutes, squeeze them firmly and remove as much water as possible. This is the point where the recipe separates a crisp pancake from a soggy one.

Do not skip directly from shredding to flour. Rinse, salt, rest and squeeze the potatoes in that order before seasoning and binding.

How Do You Mix the Potato Pancake?

Add black pepper to the squeezed potato shreds, then mix in one to two tablespoons flour. Coat the shreds evenly without turning the mixture into a heavy flour batter.

The flour range allows the mixture to use only what it needs. Start with the lower amount and keep the stated upper limit rather than adding flour freely. The goal is to help the dry shreds hold together while keeping potato at the centre of the pancake.

Once mixed, cook the batter promptly. The preparation has already spent 15 minutes resting with salt, and the next useful step is direct contact with hot oil.

How Do You Pan-Fry Gamjajeon?

Heat five tablespoons olive oil in a pan. Add a handful of the potato mixture and press it flat. Pan-fry until the edges turn golden, then flip and crisp the other side.

Use the edge colour as the cue rather than relying on a fixed frying time. The first side needs enough contact to become golden before flipping. The second side should also develop a crisp surface rather than being removed as soon as the pancake turns over.

The thin shreds and flat shape work together here. Thin potato exposes more edges, while pressing the handful down increases contact with the oil and pan. Serve the jeon hot so that texture is still clear.

How Do You Make the Classic Soy Dip?

Combine half a chopped green chilli with two tablespoons soy sauce, one tablespoon vinegar, one tablespoon sugar and half a tablespoon sesame seeds.

Mix until the sugar is incorporated and the chopped chilli and sesame seeds are distributed through the sauce. This is the classic dipping option in the recipe, giving the fried potato a salty, sweet and vinegary contrast.

Keep it on the side so each piece can be dipped just before eating. That preserves the crisp pancake instead of soaking its surface in advance.

How Do You Make the Gochugaru Chimichurri-Style Sauce?

Mix one cup chopped cilantro, three minced garlic cloves, one diced fresh red chilli, one teaspoon dried oregano and one teaspoon gochugaru. Add one teaspoon salt, half a teaspoon black pepper, two tablespoons apple vinegar and ten tablespoons olive oil.

This sauce is the fresh twist in the recipe. Cilantro and garlic form the herb base, while fresh chilli and gochugaru provide two chilli elements. Apple vinegar brings acidity and olive oil carries the mixture.

Spoon the sauce over the hot jeon, or serve it beside the soy dip. If you spoon it over, do so when serving rather than leaving the pancake covered for an extended period.

How Should You Serve the Two Sauces?

Serve both sauces with the gamjajeon so the same crisp potato pancake can be tried in two ways. The soy dip stays close to a familiar Korean jeon accompaniment. The chimichurri-style sauce adds a herb-heavy, gochugaru-spiced finish.

You can spoon the chimichurri-style sauce over the hot pancake or serve both sauces on the side. The side option gives more control over each bite and keeps the surface dry until it is eaten.

FAQ

Why is my gamjajeon soggy?

The potato shreds may still hold too much water. Salt them for 15 minutes and squeeze out as much liquid as possible before adding flour.

How much flour should you use?

Use one to two tablespoons flour for three potatoes. The recipe does not call for a heavy flour batter.

When is the pancake ready to flip?

Flip when the edges have turned golden. Then crisp the second side before removing it from the pan.

Can you serve both sauces on the side?

Yes. Spoon the chimichurri-style sauce over the hot jeon, or serve it and the classic soy dip separately.
