Froth 70ml whipping cream with two to three tablespoons syrup. Stop when the cream is thick but still pourable. It needs enough structure to create a visible top layer without becoming so stiff that it sits like a solid spoonful.

Pour the cream over the iced espresso and sprinkle injeolmi powder across the surface. The drink is complete at that point. There is no milk in the coffee itself and no additional mixing step.

Why Should You Sip It Without Stirring?

Do not stir the injeolmi Einspanner. Sip straight through the cream so the espresso mixes with the topping in each mouthful.

Keeping the two layers intact preserves the intended contrast: creamy, soft sweetness first, followed by the proper espresso kick underneath. Stirring would combine those textures before you drink them and remove the layered effect.

Continue aerating until the coffee has enough volume and structure to sit over the omija mixture. You want a thick layer of foam rather than a few surface bubbles, so stop based on that visible change.

How Do You Assemble the Omija Aerocano?
